A woman that is friends with my cousins is part of a local Viking club...not historic Vikings, but a club like the Elks clubbed for people of Scandinavian decent. She is South Boston Irish, but her hubby is the Scandi and has belonged to the club since he was a kid. She runs a St Patricks Day party for a fund raiser. This year she actually cooked the Corned Beef and Cabbage dinner... and it was fabulous. I had to make Dad a tuna sandwich but he could have cake. After the meal I thanked her and told her how special it was since cooking at home has been a low sodium challenge.

I ended up going the group as they were opening it up to people who did not have Scandinavian ancestry because they needed new blood. The cousins joined so I thought I would too. I am hoping to set up some arts and crafts programs and may join in their craft fair.

Wanna borrow some of my Scandinavian heritage? My mom was half Norwegian and half German and my dad had some Norwegian too. :)

Only trouble with corned beef and cabbage is that it isn't actually Irish.
