Feb. 4th, 2023 07:36 amWhen I first woke up it was -11. When I showered it was -9. IT is now -8. My furnace has been gunning as the wind hit the house like a sledge hammer all night long.
Yesterday I never received a call from the team lead. At lunch time I received a private message from the other department asking me to have a training meeting without my management knowing. I took a screen shot and sent it to both the boss and team lead as this will take a few hours. No one responded. Maybe they are getting ready to lay me off.
Yesterday I pulled out a cook book I hadn't looked at in 20 years. It was my first wok cook book. I figure when the day comes that I am only cooking for 1 that the wok will be my best friend. Easy and fast...and you can be adventurous. The funny thing is that the ingredients listed in the recipes are so much easier to get these days. For dinner I made a kung pow recipe from the book except I used sword fish instead of scallops. The little fish market down the street had a nice small piece of sword so I used that. Friday will be my not eat what Dad eats night.
Today I am making spaghetti and meatballs. I make a decent low sodium sauce...mostly because I boost it with garlic, red pepper flakes and red wine.
I have also showed Dad how to find the sodium levels in food. He's not a reader so never looked at anything in his 80 years. I want him involved in his food choices...mostly so he knows why I get pissed..because he will never have any accountability ;-) I was able to get him to pick out things so I could make him a snack mix... unsalted almonds, m&m candies, raisins and junior mints. I find he needs a snack now that he cant eat a lot of carb snacks at work. This is just 15 MG of sodium per 1/4 cup. This will be a good snack for me as well. I am a snacker.
