The time of year is getting to me. I dreamed of Ma loosing her sight. It was Labor Day weekend. It made the day uneasy.

I find cooking for myself comforting so I made a Chinese Eggplant dish with veggies from my garden. It is more of a sweet and tangy dish than hot spicy. I had it with grilled salmon. It will be great over rice for lunch.

I really like cooking Asian styles, but there is a ton of prep before you get to cooking. Sometimes that helps.
